Pomegranate Avocado Quick and Easy Salad

There are days when I get home and the last thing I want to do is to prepare food. However, over the years I have experimented with quick and easy recipes that don’t take much of my time and still allow me to eat healthy! One of my favourites is a Pomegranate Avocado Salad. It is very nutritious providing you with fibre, monounsaturated fats, vitamins A, B6, and C, magnesium and iron.

Ingredients

Dressing:
Drizzle of pomegranate molasses

Salad:
4 cups Spring mix salad
1 small avocado – diced
1 cup pomegranate arils
1-2 tbsp unsalted sunflower seeds or walnut pieces

Instructions:
Mix all the ingredients together! It’s as simple as that. It usually takes me less than 5 minutes to prepare this salad.
I often substitute the pomegranate with apple. Note that you can modify the recipe as you wish – experiment on your own!
