There are days when I get home and the last thing I want to do is to prepare food. However, over the years I have experimented with quick and easy recipes that don’t take much of my time and still allow me to eat healthy!

Pomegranate Avocado Quick and Easy Salad

Prep Time 5 minutes
- 4 cups Spring mix salad
- 1 small Avocado diced
- 1 cup pomegranate arils
- 1-2 tablespoons unsalted sunflower seeds or walnut pieces
- Mix all the ingredients together! It's as simple as that. It usually takes me less than 5 minutes to prepare this salad.
I often substitute the pomegranate with apple. Note that you can modify the recipe as you wish - experiment on your own!
